- 3/4 cup Italian style bread crumbs, or plain with 1 teaspoon Italian seasoning
- 1 tablespoon minced dried onion
- 1/2 teaspoon coarse Kosher salt
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon cayenne
- 1 cup Buffalo Wing Sauce
- 2 tablespoons blue cheese dressing, plus more for dipping
- 2 tablespoons blue cheese, crumbled
- Cooking Spray
Instructions
- Preheat the oven to 350°F and coat a 9×13 baking dish with cooking spray to prevent sticking.
- In a large mixing bowl, combine ground chicken, beaten egg, bread crumbs, minced dried onion, coarse Kosher salt, ground black pepper, and cayenne. Mix thoroughly using clean hands or wearing gloves.
- Shape the mixture into 2-inch meatballs, adding more breadcrumbs if the mixture is too sticky.
- Bake the meatballs for 20 minutes, or until fully cooked through with an internal temperature of 165°F.
- In a medium saucepan over low heat, combine Buffalo Wing Sauce and blue cheese dressing, or keep warm in a slow cooker for serving.
- Add the baked meatballs to the sauce and simmer for an additional 5-10 minutes. Sprinkle with crumbled blue cheese before serving hot.
