  • 3/4 cup Italian style bread crumbs, or plain with 1 teaspoon Italian seasoning
  • 1 tablespoon minced dried onion
  • 1/2 teaspoon coarse Kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon cayenne
  • 1 cup Buffalo Wing Sauce
  • 2 tablespoons blue cheese dressing, plus more for dipping
  • 2 tablespoons blue cheese, crumbled
  • Cooking Spray

Instructions

  1. Preheat the oven to 350°F and coat a 9×13 baking dish with cooking spray to prevent sticking.
  2. In a large mixing bowl, combine ground chicken, beaten egg, bread crumbs, minced dried onion, coarse Kosher salt, ground black pepper, and cayenne. Mix thoroughly using clean hands or wearing gloves.
  3. Shape the mixture into 2-inch meatballs, adding more breadcrumbs if the mixture is too sticky.
  4. Bake the meatballs for 20 minutes, or until fully cooked through with an internal temperature of 165°F.
  5. In a medium saucepan over low heat, combine Buffalo Wing Sauce and blue cheese dressing, or keep warm in a slow cooker for serving.
  6. Add the baked meatballs to the sauce and simmer for an additional 5-10 minutes. Sprinkle with crumbled blue cheese before serving hot.
