Ingredients
Scale
- 4 cups all-purpose flour
- ¾ cup granulated sugar
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons salt
- ½ cup cold unsalted butter cubed
- ½ cup cold vegetable shortening cubed (or more butter)
- 2 cups cold buttermilk
- 2 teaspoons vanilla extract
- 2 cups fresh or frozen blueberries
- 1 cup powdered sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 450°F and grease a 9 x 13 inch baking dish with butter.
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk well to ensure even mixing and break up clumps.
- Cut butter and shortening into cubes, then add to the dry mixture. Use a pastry cutter to mix until pieces are small and resemble oatmeal.
- Pour in buttermilk and vanilla. Mix gently with a spatula until combined. Fold in blueberries carefully to avoid bursting them.
- On a floured surface, press the dough into a flat disc about 2 inches thick. Use a 2-inch biscuit cutter to cut out 24 biscuits or cut into 2-inch squares with a knife.
- Place the biscuits in the prepared baking dish and lower the oven temperature to 425°F. Bake for 30-40 minutes, checking for doneness at 30 minutes with a toothpick.
- Let the biscuits cool in the pan. To make the optional glaze, whisk together powdered sugar, lemon juice, and cream until smooth, then drizzle over cooled biscuits.

Ensure accurate measuring of flour to avoid tough biscuits; fluff, scoop, and level your flour when measuring.
To keep biscuits from browning too quickly, use a piece of foil if they start to darken before fully baked.
