  • 2 cups cold buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 450°F and grease a 9 x 13 inch baking dish with butter.
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk well to ensure even mixing and break up clumps.
  3. Cut butter and shortening into cubes, then add to the dry mixture. Use a pastry cutter to mix until pieces are small and resemble oatmeal.
  4. Pour in buttermilk and vanilla. Mix gently with a spatula until combined. Fold in blueberries carefully to avoid bursting them.
  5. On a floured surface, press the dough into a flat disc about 2 inches thick. Use a 2-inch biscuit cutter to cut out 24 biscuits or cut into 2-inch squares with a knife.
  6. Place the biscuits in the prepared baking dish and lower the oven temperature to 425°F. Bake for 30-40 minutes, checking for doneness at 30 minutes with a toothpick.
  7. Let the biscuits cool in the pan. To make the optional glaze, whisk together powdered sugar, lemon juice, and cream until smooth, then drizzle over cooled biscuits.
