- 1 pound ground beef
- 8 small flour tortillas
- salt and black pepper, to taste
- taco seasoning
- 1 to 1 1/2 cups shredded cheese
- sour cream, for topping
- 1 avocado, sliced or diced
- 1 cup diced tomatoes
- fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat the Blackstone griddle over medium-high heat.
- Divide the ground beef into 8 equal portions.
- Place one portion of beef onto each flour tortilla and press it into a thin layer covering most of the tortilla. Season with salt and pepper.
- Place each tortilla beef-side down on the hot griddle.
- Press firmly with a burger press or spatula and cook until the beef develops a browned, crispy crust and is cooked through.
- Flip so the tortilla is against the griddle.
- Sprinkle shredded cheese over the cooked beef and allow it to melt while the tortilla lightly toasts.
- Remove from the Blackstone.
- Top with sour cream, fresh cilantro, avocado, diced tomatoes, and additional shredded cheese if desired.
- Finish with a squeeze of fresh lime juice and serve immediately.
