  1. Preheat the Blackstone griddle to medium-high heat.

  3. Add butter or oil to the griddle and cook the sliced onions until they are tender and caramelized, about 8 to 12 minutes. Move the onions to a cooler area of the griddle.
  4. Cook the ribeyes on the hot griddle until they reach your desired doneness, ensuring they reach a minimum internal temperature of 145°F. Allow them to rest for 3 minutes after cooking.
  5. Slice the ribeye thinly against the grain after resting.
