These Beef Enchiladas deliver irresistible flavor with simple preparation. Featuring ground beef, cheese, and enchilada sauce, they’re perfect for a quick comfort meal!

  • 1 lb ground beef
  • 1 (1 ounce) package taco seasoning, (about 2 tablespoons)
  • 1 (4 ounce) can diced green chiles
  • 1 (15 ounce) can red enchilada sauce
  • 2 cups cheddar cheese, divided
  • 8 (8 inch) soft flour tortillas

Instructions

  1. Preheat your oven to 350℉ and lightly spray a 9×13 baking dish with cooking spray.
  2. In a large skillet, brown the ground beef over medium-high heat, breaking it up until no longer pink. Drain any excess fat.
  3. Add the taco seasoning and 2/3 cup water to the beef. Cook over medium-high heat until most of the liquid evaporates.
  4. Remove from heat and stir in the diced green chiles and 1/3 cup of enchilada sauce.
  5. Take each tortilla and fill it with 1/3 cup of the beef mixture, topping with about 2 tablespoons of cheese. Roll the tortilla and place it seam side down in the baking dish. Repeat with the remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled enchiladas and sprinkle the remaining 1 cup of cheese on top.
  7. Cover the dish with foil and bake for 15 minutes. Then, remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly. Serve with toppings like sour cream, guacamole, and pico de gallo.
