- 1 1/2 pounds 80/20 ground beef
- salt and black pepper, to taste
- 4 slices sharp cheddar cheese
- 4 hamburger buns
- 1 tablespoon butter, softened
- 1 large onion, cut into thick slices
- 1 teaspoon oil
- 8 slices bacon, cooked until crispy
- 1 large tomato, sliced
- 1 cup homemade pimento cheese
- 1/2 cup bbq sauce, plus more as desired
Instructions
- Preheat the grill to medium-high heat.
- Divide the ground beef into four equal portions, forming patties and make a small indentation in the center. Season with salt and pepper.
- Brush the onion slices with oil.
- Grill the onion slices until they're softened and lightly charred, flipping as necessary. Set them aside after grilling.
- Place the burger patties on the grill, cooking until they reach an internal temperature of 160°F.
- In the last minute or two, place a slice of sharp cheddar on each burger to melt.
- Butter the cut sides of the buns and toast them briefly on the grill.
- Spread BBQ sauce on the bottom half of each bun. Add the melted cheddar burger patty, followed by the pimento cheese, grilled onions, bacon, sliced tomato, and a drizzle of BBQ sauce on top.
- Cap with the top bun and serve immediately.
