Ingredients

  • 1 1/2 pounds 80/20 ground beef
  • salt and black pepper, to taste
  • 4 slices sharp cheddar cheese
  • 4 hamburger buns
  • 1 tablespoon butter, softened
  • 1 large onion, cut into thick slices
  • 1 teaspoon oil
  • 8 slices bacon, cooked until crispy
  • 1 large tomato, sliced
  • 1 cup homemade pimento cheese
  • 1/2 cup bbq sauce, plus more as desired

Instructions

  1. Preheat the grill to medium-high heat.
  2. Divide the ground beef into four equal portions, forming patties and make a small indentation in the center. Season with salt and pepper.
  3. Brush the onion slices with oil.
  4. Grill the onion slices until they're softened and lightly charred, flipping as necessary. Set them aside after grilling.
  5. Place the burger patties on the grill, cooking until they reach an internal temperature of 160°F.
  6. In the last minute or two, place a slice of sharp cheddar on each burger to melt.
  7. Butter the cut sides of the buns and toast them briefly on the grill.
  8. Spread BBQ sauce on the bottom half of each bun. Add the melted cheddar burger patty, followed by the pimento cheese, grilled onions, bacon, sliced tomato, and a drizzle of BBQ sauce on top.
  9. Cap with the top bun and serve immediately.
