  • 56 cups sourdough, brioche or country loaf, 1-2 days old and cut into 2-inch cubes
  • 1 ½ cups cubed ham
  • 10 tablespoons salted butter, divided
  • 1 leek, whites only, cut into half moons
  • 6 eggs
  • 1 ¼ cups half-and-half
  • 2 tablespoons Dijon mustard
  • 1 ½ teaspoons coarse kosher salt, divided
  • 1 teaspoon ground black pepper, divided
  • 3 cups Swiss or Gruyere cheese, grated and divided
  • 2 tablespoons Parmesan cheese, finely grated
  • 4 tablespoons flour
  • 2 cups whole milk
  • 1/4 teaspoon grated nutmeg
  • 1 tablespoon chives, chopped

Instructions

  1. Preheat the oven to 375°F and grease a 9×13 baking dish. Place the bread cubes and cubed ham into the dish, tossing them lightly. Set aside.
  2. Melt 1 tablespoon of butter in a saucepan over medium heat. Add the leeks and sauté until soft. Evenly distribute them over the bread and ham.
  3. Melt 5 tablespoons of butter in the microwave. In a mixing bowl, combine the melted butter, eggs, half-and-half, Dijon mustard, 1 teaspoon kosher salt, and ½ teaspoon black pepper.
  4. Pour half of the egg mixture over the bread, gently pressing down to help absorption. Then pour the rest and repeat. Add the cheese, tossing to distribute evenly.
  5. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes or until the internal temperature is 160°F. Top with Parmesan cheese and broil for 1-2 minutes until golden brown.
  6. While baking, melt the remaining 4 tablespoons of butter. Whisk in flour to form a roux, then slowly whisk in the whole milk until the sauce thickens. Stir in nutmeg, remaining salt, and pepper before removing from heat.
  7. Serve the sauce over the casserole or on the side. Sprinkle with chives before serving.
