Ingredients

  • 2 pounds bacon, raw, chopped
  • 2 teaspoons butter
  • 2 large yellow onions, diced
  • 1 tsp salt
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 pinch cayenne pepper
  • 1/2 cup water
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place chopped bacon on a baking sheet and bake until done, approximately 10-15 minutes. Drain the fat and roughly chop the bacon.
  3. Reserve the drained bacon fat.
  4. In a pot, add 2 teaspoons of the reserved bacon fat and butter over medium heat. Add the diced onions and salt, sautéing for about 10 minutes while stirring frequently.
  5. On a cutting board, further chop the cooled bacon with a chef's knife for smaller pieces.
  6. To the sautéed onions, add the brown sugar, apple cider vinegar, dried thyme, black pepper, and cayenne pepper. Stir in the bacon pieces.
  7. Pour in the water and allow the mixture to cook for 10-15 minutes until it achieves a thick, brick-brown color.
  8. Stir in the olive oil and balsamic vinegar thoroughly.

Notes
