Ingredients
- 2 pounds bacon, raw, chopped
- 2 teaspoons butter
- 2 large yellow onions, diced
- 1 tsp salt
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 pinch cayenne pepper
- 1/2 cup water
- 2 teaspoons balsamic vinegar
- 2 teaspoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Place chopped bacon on a baking sheet and bake until done, approximately 10-15 minutes. Drain the fat and roughly chop the bacon.
- Reserve the drained bacon fat.
- In a pot, add 2 teaspoons of the reserved bacon fat and butter over medium heat. Add the diced onions and salt, sautéing for about 10 minutes while stirring frequently.
- On a cutting board, further chop the cooled bacon with a chef's knife for smaller pieces.
- To the sautéed onions, add the brown sugar, apple cider vinegar, dried thyme, black pepper, and cayenne pepper. Stir in the bacon pieces.
- Pour in the water and allow the mixture to cook for 10-15 minutes until it achieves a thick, brick-brown color.
- Stir in the olive oil and balsamic vinegar thoroughly.
