- Combine the crumbled bacon, diced pickles, and cheese cubes with the ground beef, mixing gently to avoid tough meatballs.
- Use a 1/4 cup measuring cup to scoop out the mixture and form into meatballs, tucking cheese cubes inside each one.
- Place meatballs on a baking sheet and chill in the refrigerator for 30-40 minutes to help maintain their shape while grilling.
- Preheat the grill to medium-high heat, and place a grilling pan on the grates to heat up.
- Brush meatballs with olive oil on both sides to prevent sticking, then place them on the grilling pan.
- Cook meatballs, turning every 2 minutes until browned on all sides, checking for doneness after 15 minutes.
- Ensure the internal temperature reaches at least 160F/102C by using an instant-read meat thermometer or cutting one open.
- Serve hot with your favorite dipping sauce if desired.
