  • 1 lb. asparagus, thick spears preferred for roasting
  • 1 t + 1 tsp. peanut oil
  • 1 t soy sauce
  • 1 tsp. toasted sesame oil
  • 2 tsp. sesame seeds, toasted

Instructions

  1. Preheat the oven to 400°F.
  2. Break a piece of asparagus to find where the woody part begins, then cut all asparagus to that length.
  3. Place asparagus on a baking sheet and brush with 1 tablespoon of peanut oil, ensuring both sides are coated. Any leftover oil can be mixed into the glaze.
  4. Roast the asparagus for about 15 minutes, shaking the pan gently once or twice.
  5. In a bowl, whisk together the 1 teaspoon of peanut oil, soy sauce, and toasted sesame oil.
  6. Once the asparagus is tender and lightly browned, remove from the oven and brush with the soy-sesame glaze. Return to the oven and roast for an additional 5-7 minutes; adjust time based on the thickness of the spears.
  7. In a dry pan, toast the sesame seeds over medium heat for just over a minute until they are lightly browned.
  8. Remove the asparagus from the oven, sprinkle the toasted sesame seeds over the top, and serve hot.
