- 1 cup pastry flour, substitute all purpose flour
- ½ cup sharp white cheddar cheese, shredded (optional)
- ¼ teaspoon kosher salt
- 6 tablespoons unsalted butter, cold
- 2 tablespoons water, cold
- 1 large egg, beaten for egg wash
- 1 cup sharp white cheddar cheese, shredded
- ½ cup caramelized onions, optional
- 3–4 apples, thinly sliced
- 2 teaspoons granulated sugar
- 2 teaspoons fresh thyme
Instructions
- Cut the cold butter into small cubes and place it in the fridge while you prepare the other ingredients for the crust.
- In a medium bowl, combine flour, shredded cheddar cheese, and salt. Incorporate the cold butter by pressing it into the mixture until it resembles quarter-sized crumbs.
- Add the cold water and mix until a slightly sticky dough forms into a ball.
- Shape the dough into a slightly flattened disk and wrap it in plastic wrap. Chill in the fridge for at least 30 minutes to maintain flakiness.
- This dough can also be prepared up to 2 days ahead and stored in the fridge until ready to use.
