  • 1 1/2 pounds lean ground beef
  • 1 1/2 cups diced onion
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 1/2 tablespoons italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 15 ounce can tomato sauce
  • 1 15 ounce can diced tomatoes
  • 2 1/2 cups beef stock
  • 1 1/2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese
  • Chopped Parsley, optional

Instructions

  1. In a large, deep skillet over medium-high heat, brown the ground beef until fully cooked.
  2. Use a slotted spoon to transfer the cooked beef to a bowl, leaving about 2 tablespoons of fat in the pan.
  3. Add diced onion to the skillet and cook for 5 minutes until softened.
  4. Add minced garlic and cook for an additional minute.
  5. Stir in tomato paste, italian seasoning, garlic powder, onion powder, and smoked paprika. Cook for 1-2 minutes until the tomato paste darkens.
  6. Return the cooked beef to the skillet, then add tomato sauce, diced tomatoes, and beef stock.
  7. Bring the mixture to a boil, then stir in elbow macaroni.
  8. Cover the skillet and reduce heat to low. Simmer for 15-20 minutes until the pasta is tender and most liquid is absorbed, stirring occasionally.
  9. Remove the lid and stir in shredded cheddar cheese.
  10. Serve hot, optionally garnished with chopped parsley and parmesan cheese.
