- ¾ cup unsalted butter room temperature
- ½ cup granulated sugar
- ½ cup light brown sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1¾ cups all-purpose flour
- ¾ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ tsp ground cinnamon
- 1½ cups quick-cooking oats
- 1 cup sliced almonds coarsely chopped, plus more for topping
- 1 cup butterscotch baking chips
Instructions
- Preheat your oven to 350°F.
- In a mixer, cream together the butter, granulated sugar, and brown sugar until the mixture is light and fluffy for about 3-4 minutes on medium speed.
- Add in the vanilla extract and eggs, mixing until well incorporated.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon, and stir to mix thoroughly.
- Gradually add half the dry ingredients to the butter mixture, mixing until fully combined.
- Incorporate the remaining dry ingredients and mix well again.
- Add the oats, almonds, and butterscotch chips, stirring until evenly combined.
- Transfer the blondie batter into a 10” cast iron skillet, pressing it into an even layer and topping with extra sliced almonds.
- Bake for 40-42 minutes or until the top turns light golden brown.
- Allow the skillet to cool on a wire rack before slicing and serving.
