  • 2 lb. pork belly skin-on, cut into 1 to 1.5-inch thick strips
  • 1 tsp kosher salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • avocado oil spray optional

Instructions

  1. Pat the pork belly dry on all sides using paper towels.
  2. Score the skin in parallel lines or a crosshatch pattern, making sure not to cut into the meat.
  3. Mix kosher salt, black pepper, garlic powder, paprika, and onion powder. Generously season all sides of the pork belly. Optionally, refrigerate the seasoned pork belly uncovered for 1 to 4 hours or overnight.
  4. Preheat the air fryer to 350°F.
  5. Place the pork belly in a single layer in the air fryer basket with the skin side up. Avoid overlapping pieces.
  6. Cook at 350°F for 25 minutes to render the fat.
  7. Raise the temperature to 400°F and cook for an additional 10 to 15 minutes until the skin is deep golden and crispy. Keep an eye on it during this stage.
  8. Remove from the air fryer and let it rest for 5 minutes before slicing and serving.
