  • 1 1/2 pounds ground lamb or beef
  • 1 small yellow onion, finely grated, drained of excess juice
  • 2 teaspoons urfa biber, plus more to finish
  • 1 teaspoon cayenne (optional)
  • 1 teaspoon sumac
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Kosher salt
  • freshly-ground black pepper
  • 3 tablespoons tomato paste
  • 2 tablespoons extra virgin olive oil, plus more for the grill
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • Lavash bread, pita, or flatbread of choice (optional)
  • Pickled Onions (optional)
  • 2 vine-ripened medium tomatoes, sliced (optional)

Instructions

  1. In a large bowl, combine the ground meat, grated onion, urfa biber, cayenne (if using), sumac, cumin, smoked paprika, salt, and black pepper. Mix well.
  2. Add the tomato paste and olive oil to the meat mixture, kneading until all ingredients are blended. Cover and refrigerate, chilling for at least 30 minutes or overnight.
  3. If you're using wood skewers, soak them in water for 30 minutes. Oil the grill grates using a paper towel dipped in oil and set the grill to medium to heat it up.
  4. Divide the chilled meat mixture into 6 equal parts. Mold each part around a skewer to form thick kebabs, ensuring the skewer is fully covered.
  5. Place the kebabs on the grill over direct heat. Grill for 5 to 6 minutes on one side, then turn and cook for another 5 to 6 minutes until they are well-seared and no longer pink inside.
  6. Once cooked, transfer the kebabs to a platter, sprinkle with extra urfa biber and parsley, and serve hot with lavash, pickled onions, and sliced tomatoes.
