- 1 lb ground turkey (94% lean)
- 1 medium zucchini (about 1 cup, moisture removed)
- ⅓ cup diced yellow onion (finely diced)
- 1 teaspoon dijon mustard
- 1 teaspoon garlic powder (or 1 large minced garlic clove)
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt (or to taste)
- ½ teaspoon ground pepper (or to taste)
- For Serving: 8 oz of pasta and 3 cups of marinara sauce
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Grate zucchini and remove excess moisture.
- In a mixing bowl, combine zucchini, turkey, onion, mustard, garlic powder, onion powder, oregano, red pepper flakes, salt, and pepper.
- Shape meat mixture into 20-24 golf ball-sized meatballs.
- Place meatballs on baking sheet and bake for 15-18 minutes until browned.
- Meanwhile, cook pasta as directed, drain, and mix with marinara sauce.
- Combine baked meatballs with pasta and serve hot.
