Ingredients

  • 1.25 cups greek yogurt or skyr yogurt
  • ¾ cup maple syrup
  • ¼ cup avocado oil
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 425℉. Prepare a 9-inch cake pan by greasing and lightly flouring it.
  2. In a large bowl, combine the dry ingredients and set aside.
  3. In another bowl, mix the wet ingredients until smooth. Gradually add the dry ingredients to the wet and stir until just combined.
  4. Pour the batter into the prepared cake pan.
  5. Bake at 425℉ for 5 minutes, then lower the temperature to 350℉ and continue baking for 20-25 minutes. A toothpick should come out with a few crumbs when done.
  6. Let the cake cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
