  • 1/3 cup (56 grams) white chocolate chopped and melted
  • 1/2 cup (120 grams) plain greek yogurt
  • 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
  • fresh raspberries for garnish, optional

Instructions

  1. In a small bowl, beat the whipping cream until stiff peaks form. Avoid overmixing it to prevent turning it into butter.
  2. In another medium bowl, combine the cream cheese and melted white chocolate using electric beaters. Mix in the Greek yogurt until fully blended, then fold in the mashed raspberries.
  3. Gently fold in most of the whipped cream, reserving one tablespoon to top the mousse later. Keep the texture light and airy.
  4. Spoon the mousse into two serving glasses. You can serve immediately or chill for up to eight hours. It will thicken more as it cools, resembling a creamy cheesecake filling.
  5. Once ready to serve, top with the reserved whipped cream and garnish with fresh raspberries if you like.
