- Pinch of salt
- ½ cup chopped walnuts (optional)
- 1 medium banana, sliced lengthways for topping
Instructions
- Preheat oven to 350°F (180°C) and prepare the loaf pan with parchment paper.
- Mash ripe bananas in a bowl until thick and lumpy.
- Mix in brown sugar, dairy-free milk, oil, vinegar, and vanilla until combined.
- Sift in flour, baking powder, baking soda, cinnamon, and salt, gently mixing.
- Fold in walnuts if desired.
- Pour the batter into the pan and smooth the top, adding banana slices on top.
- Bake for 60-70 minutes, checking doneness with a toothpick.
- Cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing.
