Ingredients

  • 1 cup (240ml) warm whole milk (110°F/43°C)
  • 2 and 1/4 teaspoons (7g) Platinum Yeast (or 1 packet active dry yeast)
  • 1/4 cup (85g) + 1 teaspoon honey, divided
  • 1 large egg + 1 egg yolk
  • 1/4 cup (4 Tbsp; 56g) unsalted butter, melted
  • 3 and 1/2 cups (455g) bread flour (spooned & leveled)
  • 1 teaspoon salt
  • 1/4 cup (4 Tbsp; 56g) very soft unsalted butter (for topping)
  • 2 tablespoons (42g) honey (for topping)

Instructions

  • Combine warm milk, yeast, and 1 teaspoon of honey; let it rest to become foamy.
  • Mix remaining honey, egg, yolk, melted butter, 3 cups flour, and salt in a stand mixer until combined.
  • Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
  • Place dough in a greased bowl, cover, and let rise until doubled in size (1-2 hours).
  • Punch down dough, divide into 15 pieces, and shape into balls in a greased baking pan.
  • Cover rolls and allow a second rise for about 1 hour.
  • Preheat oven to 350°F (177°C) and bake rolls for 20-25 minutes until golden brown.
  • Combine soft butter and honey for topping; spread over warm rolls.
