- 2 sweet onions, thinly sliced
- ½ cup light brown sugar, packed
- 10 tablespoons balsamic vinegar (equivalent to ½ cup + 2 tablespoons)
- 1 ½ teaspoons kosher salt
- 1 teaspoon black pepper
- ½ – 1 teaspoon dried thyme
Instructions
- Cook bacon in a large skillet over medium heat until crispy.
- Caramelize onions in the same skillet until golden brown.
- Deglaze skillet with balsamic vinegar.
- Add remaining balsamic, brown sugar, salt, pepper, and thyme. Stir and simmer.
- Mix crispy bacon back into the skillet and cool for 10 minutes.
- Blend to desired consistency and transfer to an airtight container.
