  • 16 ounces ham, ¼" dice
  • 2 cups shredded sharp cheddar cheese, divided
  • ¼ cup sliced green onions
  • ¼ cup cornstarch, optional
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika , optional
  • ¼ teaspoon black pepper
  • 8 large eggs
  • 2 ½ cups half-and-half

Instructions

  1. Preheat the oven by setting the rack to the center position and heating to 350ºF (177ºC). Prepare a 9×13-inch baking dish with oil or cooking spray.
  2. Spread the frozen tater tots, diced ham, 1 cup of cheddar cheese, and green onions evenly in the baking dish.
  3. In a large bowl, whisk together the cornstarch, salt, garlic powder, onion powder, smoked paprika (if desired), and black pepper. Then add the eggs and whisk until combined. Stir in the half-and-half and pour the mixture over the ingredients in the baking dish. Top with the remaining 1 cup of cheese.
  4. Bake the casserole for 45 to 55 minutes, until the center is set and a toothpick inserted comes out clean. The internal temperature should reach 180 to 190ºF (82 to 88ºC). Allow it to cool for 10 minutes before slicing and serving.
