Ingredients

  • ½ tbsp butter
  • ½ cup chopped white onions
  • 4 cloves garlic, minced
  • 1 pound lean ground beef

  • 6 tbsp taco seasoning
  • 8 oz. can of plain tomato sauce
  • 14.5 oz. can of fire-roasted tomatoes
  • 2 cups diced potatoes (approximately 2 medium russet potatoes, peeled and diced)
  • 2 cups shredded cheese

Instructions

  • Preheat oven to 375°F and grease a casserole dish.
  • Sauté onions and garlic with butter and olive oil until soft.
  • Cook ground beef with salt and pepper until browned.
  • Mix in taco seasoning and water, then add tomato sauce and fire-roasted tomatoes; simmer for 5 minutes.
  • Layer diced potatoes in the casserole dish, followed by the beef mixture and sprinkle cheese on top.
  • Cover and bake for 30 minutes, then uncover and bake for an additional 10-15 minutes.
  • Let it rest for 5 minutes before serving; add toppings as desired.
