Instructions
- Preheat the oven to 400°F (200°C) and prepare a muffin pan.
- Melt the butter and whisk in the grated garlic.
- Thinly slice the sweet potatoes to about 1/16 inch thick.
- Toss the sweet potato slices with butter mixture, thyme, salt, and pepper.
- Stack the sweet potato slices in each muffin cup.
- Bake for 30 to 40 minutes until golden brown and tender.
- Cool in the pan for 5 minutes before serving.
