- 5 large sweet potatoes

Instructions
- Preheat oven to 375°F.
- Prick sweet potatoes with a fork and bake on a lined baking sheet for 70-80 minutes until soft.
- Cool and scoop the insides into a food processor.
- Blend sweet potatoes with eggs, sugar, salt, pepper, vanilla, nutmeg, cinnamon, and cayenne until smooth.
- Coat a baking dish with nonstick spray, pour in the mixture, and bake for 20-25 minutes.
- For meringue, whisk egg whites, sugar, and cream of tartar over simmering water until sugar dissolves.
- Beat until soft peaks form; fold in vanilla.
- Spread meringue over sweet potato layer and broil for 30 seconds to 2 minutes until golden.
