- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup chocolate chips or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a muffin tin with liners or cooking spray.
- Mash bananas in a mixing bowl and mix with honey or maple syrup, applesauce, eggs, and vanilla.
- Add the prepared spinach and blend until smooth.
- In another bowl, combine flour, baking powder, baking soda, salt, and optional cinnamon.
- Mix the dry ingredients into the wet ingredients gently.
- Fold in optional chocolate chips or nuts.
- Spoon batter into muffin cups, filling about 3/4 full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Let cool in the pan briefly before transferring to a wire rack.
