  • 2 cloves (about 2 teaspoons) minced garlic
  • ¼ cup (66 grams) double-concentrated tomato paste
  • 1 teaspoon (2 grams) smoked paprika
  • ½ teaspoon (3 grams) salt (or to taste)
  • ½ teaspoon (1 gram) chili powder
  • ¼ teaspoon (0.5 gram) black pepper
  • 2 cans (30 ounces total) navy or pinto beans, undrained (15 ounces each)
  • ⅓ cup (80 ml) bourbon
  • ¼ cup (55 grams) packed brown sugar
  • 2 tablespoons (30 ml) maple syrup
  • 2 teaspoons (10 ml) Dijon mustard
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 tablespoon (15 ml) Worcestershire sauce
  • Diced green onions (optional, for garnish)

Instructions

  • Preheat oven to 325°F (163°C) and cook bacon in a large skillet until crisp. Set aside.
  • Sauté onion and apple in bacon grease for 8-10 minutes until softened.
  • Stir in garlic, tomato paste, smoked paprika, salt, chili powder, and black pepper. Cook for 1 minute.
  • Add beans, bourbon, brown sugar, maple syrup, Dijon mustard, apple cider vinegar, and Worcestershire sauce. Bring to a boil.
  • Transfer to the oven, cover, and bake for 60-90 minutes, stirring every 20-30 minutes. For the last 30 minutes, remove the lid.
  • Optionally broil for a few minutes for caramelization. Garnish with remaining bacon and diced green onions before serving.
