Instructions
- Combine softened butter, rosemary, thyme, garlic, kosher salt, and black pepper in a food processor and pulse until well mixed.
- Rub mixture generously over the prime rib and let sit at room temperature for one hour.
- Preheat grill to 225-250°F (107-121°C).
- Smoke prime rib on the cooler side of the grill, checking temperature regularly.
- Use the guideline of 35-45 minutes per pound for desired doneness.
- Remove from grill and wrap in foil; let rest for 15-30 minutes before serving.
