  • 1/4 cup granulated sugar
  • 1/3 cup unsulphured or dark molasses (not blackstrap)
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup granulated or coarse sugar, for rolling

Instructions

  • Whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  • In a mixing bowl, beat together butter, brown sugar, and granulated sugar until creamy.
  • Add molasses, egg, and vanilla, mixing until combined.
  • Gradually mix dry ingredients into wet mixture until just combined.
  • Cover dough and chill in refrigerator for at least 1 hour.
  • Preheat oven to 350°F (177°C) and line baking sheets.
  • Roll chilled dough into balls, coat with granulated sugar, and place on baking sheets.
  • Bake for 11-12 minutes until edges are set and centers remain soft.
  • Cool on baking sheets for 5 minutes before transferring to wire rack.
