- 3/4 cup unsalted butter, softened to room temperature
- 1/2 cup packed light or dark brown sugar
- 1/4 cup granulated sugar
- 1/3 cup unsulphured or dark molasses (not blackstrap)
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 1/3 cup granulated or coarse sugar, for rolling
Instructions
- Whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a mixing bowl, beat together butter, brown sugar, and granulated sugar until creamy.
- Add molasses, egg, and vanilla, mixing until combined.
- Gradually mix dry ingredients into wet mixture until just combined.
- Cover dough and chill in refrigerator for at least 1 hour.
- Preheat oven to 350°F (177°C) and line baking sheets.
- Roll chilled dough into balls, coat with granulated sugar, and place on baking sheets.
- Bake for 11-12 minutes until edges are set and centers remain soft.
- Cool on baking sheets for 5 minutes before transferring to wire rack.
