Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- Sift together flour, baking powder, baking soda, salt, and cocoa powder.
- Cream softened butter and sugar until fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Combine wet and dry mixtures, alternating with buttermilk.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes.
- Heat cream in a saucepan and melt white chocolate chips.
- Add red food coloring to the melted chocolate mixture.
- Beat softened butter until creamy, gradually adding powdered sugar.
- Mix in vanilla and heavy cream to desired consistency.
- Core cooled cupcakes and fill with chocolate mixture.
- Frost the cupcakes and decorate with edible eyes and sprinkles.
