  • 2 cups rice (long grain or short grain)
  • 4 cups chicken broth
  • 1 (4-ounce) can green chilis, drained
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 2 tablespoons lime juice
  • 1/2 cup sour cream
  • 1 teaspoon lime juice
  • 1 cup shredded cabbage or coleslaw mix
  • 2 tablespoons cilantro, chopped
  • Avocado oil for frying tortillas (optional)
  • Tortillas (for serving)

Instructions

  • Prepare the peach salsa by mixing peaches, tomatoes, red onion, jalapeño, cilantro, lime juice, and salt.
  • Cook the lime rice in a rice cooker with rice, chicken broth, green chilis, butter, and garlic. Stir in lime juice after cooking.
  • Make the lime crema by whisking sour cream and lime juice together.
  • Assemble the bowls: heat tortillas, then layer rice, cabbage, salmon bites, peach salsa, and lime crema on each plate.
