- 1/2 cup sour cream
- 1 teaspoon lime juice
- 1 cup shredded cabbage or coleslaw mix
- 2 tablespoons cilantro, chopped
- Avocado oil for frying tortillas (optional)
- Tortillas (for serving)
Instructions
- Prepare the peach salsa by mixing peaches, tomatoes, red onion, jalapeño, cilantro, lime juice, and salt.
- Cook the lime rice in a rice cooker with rice, chicken broth, green chilis, butter, and garlic. Stir in lime juice after cooking.
- Make the lime crema by whisking sour cream and lime juice together.
- Assemble the bowls: heat tortillas, then layer rice, cabbage, salmon bites, peach salsa, and lime crema on each plate.
