- 4 small zucchini, sliced 1/4" (about 8 cups)
- 2 tablespoons avocado oil
- 1½ teaspoons Italian seasoning
- 1/4 teaspoon garlic powder
- 1/3 cup Parmesan cheese, shredded
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat the oven to 350 degrees F.
- Wash and slice zucchini into 1/4" thick rounds.
- In a bowl, combine zucchini, avocado oil, Italian seasoning, garlic powder, and Parmesan cheese.
- Spread zucchini mixture on a baking sheet and season with salt and black pepper.
- Bake for 15 minutes or until barely soft and starting to brown.
- Broil for an additional 3-5 minutes until golden brown and crispy.
- Serve warm.
