- 8 slices rye bread
- 4 tablespoons butter
- ½ cup thousand island dressing
- 4 slices swiss cheese
- 1 cup sauerkraut drained and squeezed dry
- 16 ounces corned beef sliced
Instructions
- Butter each slice of rye bread.
- Place 4 slices of bread, butter side down, on a cutting board.
- Spread 1 tablespoon of thousand island dressing on each of these slices.
- Add 1 slice of swiss cheese, ¼ of the sauerkraut, and ¼ of the corned beef on top of each slice.
- Spread the remaining dressing on the second piece of bread for each sandwich, placing it butter side out.
- Place the sandwich in a skillet over medium-low heat and cook until golden and crisp.
- Flip the sandwich to cook the other side until golden brown.
- Cut the sandwich in half and serve with extra dressing for dipping.
