This Reuben Sandwich is a quick, delightfully rich meal featuring tender corned beef, creamy swiss cheese, and zesty thousand island dressing, perfect for lunch or a cozy dinner.

Ingredients

  • 8 slices rye bread
  • 4 tablespoons butter
  • ½ cup thousand island dressing
  • 4 slices swiss cheese
  • 1 cup sauerkraut drained and squeezed dry
  • 16 ounces corned beef sliced

Instructions

  1. Butter each slice of rye bread.
  2. Place 4 slices of bread, butter side down, on a cutting board.
  3. Spread 1 tablespoon of thousand island dressing on each of these slices.
  4. Add 1 slice of swiss cheese, ¼ of the sauerkraut, and ¼ of the corned beef on top of each slice.
  5. Spread the remaining dressing on the second piece of bread for each sandwich, placing it butter side out.
  6. Place the sandwich in a skillet over medium-low heat and cook until golden and crisp.
  7. Flip the sandwich to cook the other side until golden brown.
  8. Cut the sandwich in half and serve with extra dressing for dipping.
