- 1 cup shredded sharp cheddar cheese
- 1 cup shredded colby jack cheese
- 1/2 cup mayonnaise
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 3 tablespoons chopped pimentos
Instructions
- In a medium bowl, whip the cream cheese with a hand mixer until it's light and fluffy.
- Add the shredded cheddar, colby jack, mayonnaise, cayenne pepper, garlic powder, kosher salt, and fresh ground pepper. Mix on medium speed until everything is well combined.
- Fold in the chopped pimentos until evenly distributed in the mixture.
- Transfer the pimento cheese spread to an airtight container and store in the refrigerator until ready to enjoy. It can last up to 3 months.
