  • 1 cup shredded colby jack cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3 tablespoons chopped pimentos

Instructions

  1. In a medium bowl, whip the cream cheese with a hand mixer until it's light and fluffy.
  2. Add the shredded cheddar, colby jack, mayonnaise, cayenne pepper, garlic powder, kosher salt, and fresh ground pepper. Mix on medium speed until everything is well combined.
  3. Fold in the chopped pimentos until evenly distributed in the mixture.
  4. Transfer the pimento cheese spread to an airtight container and store in the refrigerator until ready to enjoy. It can last up to 3 months.
