  • 48 thai red chilies, african bird’s eye peppers
  • 6 garlic cloves
  • 1 small red onion, chopped
  • 2 teaspoons smoked paprika
  • â…“ cup fresh cilantro, chopped
  • 1 tablespoon dried oregano, or fresh
  • ½ cup olive oil
  • 1 tablespoon white wine vinegar
  • 1 lemon, juiced
  • Salt and black pepper to taste, 1 teaspoon each

Instructions

  1. Add all the ingredients for the peri peri sauce into a blender or food processor.
  2. Blend the mixture until it becomes smooth, which should take about 1-2 minutes.
  3. Taste the sauce and modify the salt level if necessary.
  4. Pour the sauce into a jar and keep it refrigerated for up to one week, using it as required.
