Ingredients

- 4–8 thai red chilies, african bird’s eye peppers
- 6 garlic cloves
- 1 small red onion, chopped
- 2 teaspoons smoked paprika
- â…“ cup fresh cilantro, chopped
- 1 tablespoon dried oregano, or fresh
- ½ cup olive oil
- 1 tablespoon white wine vinegar
- 1 lemon, juiced
- Salt and black pepper to taste, 1 teaspoon each
Instructions
- Add all the ingredients for the peri peri sauce into a blender or food processor.
- Blend the mixture until it becomes smooth, which should take about 1-2 minutes.
- Taste the sauce and modify the salt level if necessary.
- Pour the sauce into a jar and keep it refrigerated for up to one week, using it as required.

You can adjust the amount of chilies to control the heat level of the sauce.
Using fresh oregano will enhance the flavor, but dried oregano works well too.
