Instructions
- Preheat your oven to 425°F (220°C).
- Toss the fingerling potatoes with 3 tablespoons of avocado oil.
- Mix in garlic powder, onion powder, Italian seasoning, Parmesan cheese, salt, and black pepper.
- Grease a large baking sheet with the remaining avocado oil.
- Arrange the seasoned potatoes in a single layer on the baking sheet.
- Bake for about 20 minutes or until the edges begin to brown.
- Turn the potatoes for even browning and bake for an additional 15-20 minutes until golden brown.
- Serve immediately while hot.
