- Extra crushed Oreos for topping
Instructions
- Preheat oven to 350°F (175°C).
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract and mix well.
- Combine flour, baking soda, and salt in a separate bowl, then gradually add to wet ingredients.
- Fold in crushed Oreos gently.
- For the filling, mix cream cheese until smooth, then blend in powdered sugar and vanilla extract; chill for 15-20 minutes.
- Scoop a ball of cookie dough, flatten it, and place a dollop of cheesecake filling in the center.
- Cover with another flat piece of dough, seal edges, and place on baking sheet spaced apart.
- Bake for 12-15 minutes until light golden brown, then cool on a wire rack.
