- 6 medium ripe tomatoes, halved
- 1 large onion, quartered
- 2 jalapeño peppers, halved and seeded (or keep seeds if you like it spicy!)
- 3 cloves of garlic, peeled
- 1 teaspoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of cumin
- Fresh cilantro, chopped (to taste)
- Juice from 1 lime
Instructions
- Wash tomatoes, onion, and jalapeños.
- Slice tomatoes in half and quarter the onion.
- Prep jalapeños by removing seeds if desired.
- Preheat Ninja Foodi air fryer to 400°F.
- Combine tomatoes, onion, jalapeños, and garlic in a bowl with olive oil, salt, pepper, and cumin.
- Place seasoned vegetables in air fryer basket and spread evenly.
- Cook for 15-20 minutes, shaking halfway through for even roasting.
- Allow veggies to cool slightly before blending.
- Blend roasted vegetables with lime juice and fresh cilantro to desired consistency.
- Taste and adjust seasoning as needed before serving.
