- ½ cup unsalted butter, cut into eight pieces
- 1 cup (220g) light brown sugar, packed
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup (63g) all purpose flour, spooned and leveled or weighed
- â…“ cup (35g) unsweetened cocoa powder
- ½ teaspoon salt
- 1 teaspoon cornstarch
- ½ cup (85g) chocolate chips
Instructions
- Preheat the oven to 350°F and position a rack in the center. Line a 9×9-inch metal baking pan with parchment paper and lightly grease it with nonstick spray. Set it aside.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside for later use.
- In a mixing bowl, beat the softened butter with both types of sugar until light and fluffy, about 1-2 minutes. Then, mix in the egg and vanilla extract until well combined, scraping down the sides as necessary.
- Gradually add the flour mixture while mixing on low speed until the dough is just combined.
- Stir in the mini M&Ms and chocolate chips, then refrigerate the cookie dough while preparing the brownie batter.
