  • 125ml (1/2 cup) corn syrup or golden syrup
  • 125ml (1/2 cup) maple syrup
  • 100g (1/2 cup) brown sugar
  • 75g (1/3 cup) butter, melted
  • 3 large eggs
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 3 tbsp bourbon
  • 150g (1 1/2 cups) chopped pecans
  • 100g (1 cup) pecan halves for decoration (optional)

Instructions

  • Blend flour, salt, and sugar in a food processor.
  • Incorporate cold butter and pulse until coarse crumbs form.
  • Add ice-cold water gradually and pulse until slightly heavy.
  • Form the dough into a ball, wrap in plastic, and chill for 1 hour.
  • Roll out the dough into a 12-inch circle and transfer to a pie plate.
  • Blind bake the crust at 400°F (200°C) for 15 minutes and then for an additional 5 minutes until golden.
  • Whisk corn syrup, maple syrup, brown sugar, melted butter, salt, and vanilla until smooth.
  • Add eggs one at a time, then incorporate bourbon and chopped pecans.
  • Pour filling into baked crust and decorate with pecan halves.
  • Bake at 350°F (180°C) for 35-40 minutes until edges set.
  • Cool completely before slicing and serving.
