- 250g (1 3/4 cup + 1 tsp) plain flour
- 125g (1/2 cup + 1 tbsp) cold unsalted butter, cubed
- 1 tsp salt
- 1 tbsp white sugar
- 3 tbsp ice cold water
- 125ml (1/2 cup) corn syrup or golden syrup
- 125ml (1/2 cup) maple syrup
- 100g (1/2 cup) brown sugar
- 75g (1/3 cup) butter, melted
- 3 large eggs
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3 tbsp bourbon
- 150g (1 1/2 cups) chopped pecans
- 100g (1 cup) pecan halves for decoration (optional)
Instructions
- Blend flour, salt, and sugar in a food processor.
- Incorporate cold butter and pulse until coarse crumbs form.
- Add ice-cold water gradually and pulse until slightly heavy.
- Form the dough into a ball, wrap in plastic, and chill for 1 hour.
- Roll out the dough into a 12-inch circle and transfer to a pie plate.
- Blind bake the crust at 400°F (200°C) for 15 minutes and then for an additional 5 minutes until golden.
- Whisk corn syrup, maple syrup, brown sugar, melted butter, salt, and vanilla until smooth.
- Add eggs one at a time, then incorporate bourbon and chopped pecans.
- Pour filling into baked crust and decorate with pecan halves.
- Bake at 350°F (180°C) for 35-40 minutes until edges set.
- Cool completely before slicing and serving.
