- 1 unbaked Buttery Flaky Pie Crust or All Butter Pie Crust
- 1 large egg white, lightly beaten (for egg wash)
- 1/4 cup (4 Tbsp; 56g) unsalted butter
- 2 ounces (56g) semi-sweet chocolate, finely chopped
- 1 cup (200g) granulated sugar
- 3 tablespoons (16g) unsweetened cocoa powder
- 1 teaspoon espresso powder
- 1/4 teaspoon salt
- 1/4 cup (60ml) heavy cream
- 1 teaspoon pure vanilla extract
- 2 large eggs + 1 large egg yolk
Instructions
- Prepare the pie crust and chill for at least 2 hours.
- Roll out the chilled dough, transfer to a pie dish, and crimp the edges.
- Blind bake the crust at 375°F (190°C) for 15 minutes, then remove weights and bake for another 8 minutes.
- Melt the chocolate and butter together until smooth.
- Whisk sugar, cocoa, espresso powder, and salt; then mix in cream, vanilla, eggs, and the cooled chocolate.
- Pour filling into the crust and bake at 325°F (163°C) for 50-55 minutes.
- Cool pie on a wire rack for at least 2 hours before serving.
