  • 1 &1/3 cup + 1 tbsp all purpose flour
  • 2 teaspoon cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup lucky charms marshmallows

Instructions

  1. Preheat the oven to 350F and line a large baking sheet with parchment paper.
  2. Cream the softened butter, granulated sugar, and brown sugar in a stand mixer with a paddle attachment until light and fluffy.
  3. Mix in the egg and vanilla for 30 seconds until fully incorporated.
  4. Add flour, cornstarch, baking soda, baking powder, and salt. Mix until just combined.
  5. Gently fold in the lucky charms marshmallows.
  6. Using a small cookie scoop, form dough balls, roll them in the marshmallows, and place on the baking sheet with 2 inches of space between each cookie.
  7. Bake for 8 minutes, let rest on the sheet for 5-10 minutes, then transfer to a cooling rack.
