- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 &1/3 cup + 1 tbsp all purpose flour
- 2 teaspoon cornstarch
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup lucky charms marshmallows
Instructions
- Preheat the oven to 350F and line a large baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar in a stand mixer with a paddle attachment until light and fluffy.
- Mix in the egg and vanilla for 30 seconds until fully incorporated.
- Add flour, cornstarch, baking soda, baking powder, and salt. Mix until just combined.
- Gently fold in the lucky charms marshmallows.
- Using a small cookie scoop, form dough balls, roll them in the marshmallows, and place on the baking sheet with 2 inches of space between each cookie.
- Bake for 8 minutes, let rest on the sheet for 5-10 minutes, then transfer to a cooling rack.
