  • 6 strips raw bacon
  • 1 cup chopped yellow onion
  • 2 minced garlic cloves
  • ¼ cup all purpose flour
  • 3 cups milk
  • 1 cup heavy cream
  • 1½ lbs russet potatoes – peeled and chopped into 1-inch cubes
  • 2 cups chicken broth
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 cup shredded cheddar cheese
  • ¾ cup sour cream
  • Toppings – shredded cheddar cheese, scallions or chives, additional sour cream, and crumbled bacon.

Instructions

  1. In a large Dutch oven, cook the bacon over medium-high heat until crispy. Remove and crumble onto a paper towel, leaving 1 tablespoon of grease in the pot.
  2. Add the chopped onion to the pot and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds.
  3. Sprinkle the flour into the pot, stirring for 30 seconds. Gradually pour in the milk and heavy cream while stirring continuously until the mixture thickens slightly.
  4. Incorporate the chopped potatoes, chicken broth, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 15-20 minutes until the potatoes are tender.
  5. Blend about half of the soup until smooth using a blender or immersion blender. Stir the blended portion back into the pot to create a creamy texture with some potato chunks.
  6. Add the shredded cheddar cheese, sour cream, and half of the crumbled bacon to the pot. Simmer for another 2-3 minutes until fully combined and creamy.
  7. Serve in bowls topped with the remaining bacon, extra cheese, sour cream, and chives.
