- 1 ½ pounds beef chuck roast
- 1 tablespoon olive oil
- Pepper, for seasoning
- ¼ cup soy sauce
- ¼ cup oyster sauce
- ¼ cup brown sugar
- 1 tablespoon sesame oil
- ½ teaspoon ginger, grated
- ¼ teaspoon red pepper flakes
- 3 cloves garlic, minced
- 1 cup beef broth (low sodium preferred)
- 3 tablespoons cornstarch
- 3 tablespoons water
- 1 pound broccoli florets
- Optional garnish: chopped green onions, toasted sesame seeds
Instructions
- Season beef with pepper.
- Cut beef against the grain into thin strips.
- In Instant Pot, heat olive oil and brown beef strips.
- Mix soy sauce, oyster sauce, brown sugar, sesame oil, ginger, red pepper flakes, and garlic for the sauce.
- Pour beef broth in pot, scraping bottom for bits.
- Add sauce to beef and cook on high pressure for 10 minutes.
- Make a slurry with cornstarch and water, add to pot, and thicken the sauce.
- Stir in broccoli and boil for 3 minutes, then let it rest for 5 minutes.
- Serve hot with optional garnishes and side dishes.
