- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic, minced

- ¼ teaspoon black pepper
- Chopped parsley for garnish
Instructions
- Preheat oven to 425°F and prepare a baking sheet with parchment paper.
- In a large bowl, toss carrots. In a separate bowl, whisk together balsamic vinegar, honey, olive oil, garlic, salt, and pepper. Coat carrots with half of the mixture.
- Spread carrots on the baking sheet in a single layer.
- Roast in the oven for 20 minutes until caramelized.
- Brush with the reserved mixture, then return to the oven for another 20-25 minutes until tender.
- Drizzle with remaining mixture, garnish with parsley, and serve warm.
