Ingredients

  • 2 cups (500ml) half and half or single cream
  • 1 vanilla bean

  • 1 tbsp mixed spice (blend of cassia, coriander seed, caraway, nutmeg, ginger, cloves)
  • 1 stick cinnamon

Instructions

  • Heat whole milk with vanilla bean seeds, cinnamon stick, and mixed spices in a saucepan.
  • Whisk egg yolks with sugar until pale and doubled in volume.
  • Temper egg yolk mixture by slowly adding hot milk.
  • Combine and warm the mixture in the saucepan for 2 minutes while whisking.
  • Strain eggnog through a sieve, mix in half and half, and chill before serving.
