- 4 egg yolks
- 2 cups (500ml) whole milk
- 1/2 cup (100g) sugar
- 2 cups (500ml) half and half or single cream
- 1 vanilla bean
- 1/2 tsp nutmeg
- 1 tbsp mixed spice (blend of cassia, coriander seed, caraway, nutmeg, ginger, cloves)
- 1 stick cinnamon
Instructions
- Heat whole milk with vanilla bean seeds, cinnamon stick, and mixed spices in a saucepan.
- Whisk egg yolks with sugar until pale and doubled in volume.
- Temper egg yolk mixture by slowly adding hot milk.
- Combine and warm the mixture in the saucepan for 2 minutes while whisking.
- Strain eggnog through a sieve, mix in half and half, and chill before serving.
