  • 2 tablespoons unsalted butter, softened to room temperature
  • 1 teaspoon kosher salt
  • 4 cups all-purpose flour (500 grams)
  • 3 tablespoons unsalted butter, melted (40 grams)
  • 1 teaspoon sea salt flakes, like Maldon

Instructions

  • Combine warm water, yeast, and sugar in a bowl and let stand until creamy.
  • Mix in 2 tablespoons butter, kosher salt, and 2 cups flour until combined.
  • Incorporate remaining flour gradually until fully mixed.
  • Knead the dough for about 5 minutes until smooth and elastic.
  • Let the dough rise covered in a warm area until doubled in size, about 20 minutes.
  • Shape the dough into a ball, cut into quarters, and roll each into a circle.
  • Cut each circle into 8 triangles and roll them into crescents.
  • Arrange on greased baking sheets and let rise for another 20 minutes.
  • Brush with melted butter, bake at 400°F (200°C) for 13-15 minutes.
  • Brush again with melted butter and sprinkle with sea salt flakes before serving.
