  • 1 teaspoon ground cinnamon

  • ½ teaspoon kosher salt
  • 1 premade pie crust

Instructions

  • Preheat the oven to 400°F.
  • Prick sweet potatoes with a fork and bake for about 1 hour.
  • Let sweet potatoes cool, then peel them.
  • Lower the oven temperature to 350°F.
  • Mash the peeled sweet potatoes in a bowl.
  • Combine mashed sweet potatoes with butter, brown sugar, skim milk, eggs, and vanilla, whisking until smooth.
  • Mix in flour, cinnamon, nutmeg, ginger, and salt until just combined.
