- 1 ½ pounds sweet potatoes (about 2 large)
- ½ cup unsalted butter, room temperature
- ½ cup brown sugar (or coconut sugar)
- 1 cup skim milk
- 3 large eggs
- 2 teaspoons vanilla extract
- ¼ cup all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ½ teaspoon kosher salt
- 1 premade pie crust
Instructions
- Preheat the oven to 400°F.
- Prick sweet potatoes with a fork and bake for about 1 hour.
- Let sweet potatoes cool, then peel them.
- Lower the oven temperature to 350°F.
- Mash the peeled sweet potatoes in a bowl.
- Combine mashed sweet potatoes with butter, brown sugar, skim milk, eggs, and vanilla, whisking until smooth.
- Mix in flour, cinnamon, nutmeg, ginger, and salt until just combined.
- Pour mixture into the pie crust and spread evenly.
- Bake for 50-60 minutes until center is set.
- Cool for 20 minutes before serving.
