  • 1/4 cup lightly-packed fresh parsley leaves
  • 1/4 cup lightly-packed fresh mint leaves
  • salt and pepper to taste
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey or agave nectar
  • 3 tablespoons extra-virgin olive oil
  • 2 cups firmly-packed arugula
  • 1 cup steamed peas
  • salt and pepper to taste
  • 1 lb ground turkey
  • 1/4 cup grated yellow onion
  • 2 medium cloves garlic, minced
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 23 tablespoons vegetable oil for cooking

Instructions

  1. In a blender or food processor, mix all the sauce ingredients until smooth, adding salt and pepper to taste.
  2. Refrigerate the sauce until ready to use and serve it chilled.
  3. In a mixing bowl, combine ground turkey, grated onion, minced garlic, parsley, dijon mustard, kosher salt, and black pepper. Mix well.
  4. Form the mixture into patties as desired.
  5. In a skillet, heat vegetable oil over medium heat and cook the patties for about 5-7 minutes on each side or until thoroughly cooked.
  6. In a large bowl, combine arugula, steamed peas, lemon juice, dijon mustard, honey, and extra-virgin olive oil to create a refreshing salad.
