  • 1 1/2 cups (300 grams) granulated sugar or coconut sugar
  • 1 tablespoon vanilla extract
  • 3/4 cup (182 grams) full-fat plain greek yogurt, room temperature
  • 3/4 cup (128 grams) semi-sweet chocolate chips, plus an additional 1/4 cup (43 grams) to sprinkle on top, optional
  • 1/4 cup mini semi-sweet chocolate chips, optional

Instructions

  1. Preheat the oven to 350 °F (175 °C) and line an 8"×8" (20cmx20cm) pan with parchment paper.
  2. In a medium mixing bowl, stir together the flour, cocoa powder, and salt. Set aside.
  3. In a large mixing bowl, combine the melted fat, sugar, and vanilla extract. Stir in the yogurt until just combined.
  4. Add the dry ingredients to the wet mixture and stir gently until almost no flour streaks remain; avoid overmixing.
  5. Fold in the chocolate chips, ensuring the butter is well incorporated into the batter.
  6. Transfer the batter to the prepared pan and smooth it out evenly. Top with optional mini chocolate chips.
  7. Bake for 20-24 minutes or until the center is set. Cool completely before cutting, as they will be gooey; chilling helps firm them up.
  8. Store in an airtight container for up to 3 days at room temperature or refrigerate for 1 week; they can also be frozen for up to 3 months.
